Cooking healthy meals at home is always a challenge for me. It dose not stem from a lack of desire for healthy food, but from a lack of energy. It is hard to work all day and then have the energy to craft delicious, multi ingredient, complex meals at home. So for years I have searched for ways to get better at the healthy daily dinner conundrum.
My attempts to master simple and healthy cooking have turned me to answers from fancy appliances like the hot pot and the air fryer, but ultimately they all have their limitations. My latest discovery is the simple sheet pan. Cooking whole meals on a single sheet pan is a great way to build comforting, nutritious dinners this winter without feeling like I needed to spend lots of time in the kitchen cooking.
Sheet pan meals require some simple prep like chopping and seasoning, and then it is all up to the oven to work its magic. I must admit that my repertoire has mostly been limited to root vegetables and simple proteins, but the prep times for these meals usually runs 15 minutes and mostly consists of chopping.
The cookbook that I drew my original inspiration for sheet pan cooking from is called Quick Prep Paleo. This book has a whole chapter dedicated to single sheet pan meals that can be prepared quickly and easily, and it is worth checking out if you too struggle with making dinner in your own kitchen after a long day working in someone else’s kitchen like me.
