Bay Bok Sprouts

I know that many are drawn to the growing of micro greens in their homes as a food source because they are fast, easy to grow, and nutrient dense. However, I have also discovered that Baby Bok may be worth adding to your apartment farm if your looking for something a bit more versatile and substantial to eat and grow.

If you have followed MakingFood.Blog for awhile, then you know that apartment farming is something we are currently researching here. So far, hydroponics have brought me the most success in growing my own food in my limited indoor urban space. [Read more about my hydroponics here]

Recently I harvested all of my plants, cleaned my hydroponic containers and began again. The package on my Ahopegarden hydroponic system claims that growing in this way can accelerate the growing process by 3x to 5x faster than soil-based growing. As a general rule, I do see that my seeds tend to sprout faster and that plant growth is also faster. This is probably due to the fact that I run a 20-hour a day light cycle.

However, my most significant discovery recently was that I could sprout a baby bok plant in my hydroponic system in just 24 hours. I’m amazed by that quick turn around. The best part is that baby bok is both fast growing and nutrient dense. It contains high levels of Vitamins A, K, and C, along with folate, calcium, and antioxidants. Additionally, baby bok is a tender green that is easily enjoyed raw or added to cooked dishes like ramen and stir fry.

Hydroponic baby bok is definitely worth adding to any limited-space food-growing space.
